On Post-Millennialism's Hopes for All Israel to Be Saved

The Gentile church is not the direct fulfilment of Israel's hope. Neither does Israel's hope await a future fulfilment. Israel's hope was fulfilled literally, and experienced by Jews who believed. Then Gentiles were grafted into that.

Paul’s statements about Israel didn't include an eschatological forecast – they were an explanation of first-century realities. Because he used his own conversion as a case in point.
I’m not sure an increased rate of conversion is required in order to directly fulfil any specific as-yet-unfulfilled Bible Prophecy – but I join Post-Millennialists in at least wishing for many to be saved. And I think an improvement on previous post-first-century rates is likely.
Does a future nationwide salvation of Israel need to happen, in order for Old Testament prophecy to be directly fulfilled?
Many Old Testament prophecies cited concerning the restoration of Israel included Levitical themes, and must therefore have been fulfilled in Old Covenant times. Therefore the prophesied restoration must also now be past – otherwise Levitical worship would be required again in their future – but that’s impossible.
The same prophecies often also included mention of the Messiah and the salvation which He would accomplish for Israel – which the Apostles interpreted as referring to Christ’s first coming and the Gospel. Therefore the prophesied-salvation of Israel must refer to the salvation which has been experienced according to the scheme of the Gospel – otherwise the Messiah hasn’t come yet, and no-one has been saved yet.
And the Gospel’s scheme, Paul explained, was that Bible-Prophecies concerning the procurement of salvation for all Israel, were indeed fulfilled for all Israel – but experienced only by believers. An outcome which the Prophets themselves foresaw.
I don’t know that there’s any specific Prophecy indicating the Prophets foresaw a still-future time when every last Jew would believe. Or even that the majority will believe.
But I’m joining Post-Millennialists in putting in effort to by all means save some.
And in any case, I’m sure God’s plans for Israel’s future don’t involve Judaism.
Paul quoted Jeremiah’s prophecy of the new covenant, and explained that it was already a fulfilled reality.
And as for all men knowing Him, I think that was meant in the same sense in which Paul said, “…God, who is the Saviour of all men, specially of those that believe” (1 Timothy 4:10).

If it literally means everybody - then it will only be once the goats are separated from the sheep and we are settled in the eternal Kingdom in new heavens and a new earth.
